During fermentation, 20% whole bunches (with stems) are used to bring more depth, flavour and texture to the wine. Aged in oak for just 5 months, preserving as much as possible of the character of the grape and the <em>terroir<\/em> itself. The wine is more acidic than average, juicy and berry-driven, but already with noticeable developed notes. It shows red berries (cherry, strawberry, raspberry), light spiciness and elegance. An excellent example of the Pinot Noir grape variety!<\/p>\n<p>It's not for nothing they say Pinot Noir and duck breast are a <em>match made in heaven.\u00a0<\/em>Try this wine (lightly chilled!) with the duck breast listed in the additional information and you'll understand what they mean.
