Charly Nicolle Chablis AOC “Per Aspera” 37.5cl
1690 €
Charly Nicolle “Per Aspera” Chablis AOC is a classic dry white Burgundy, made from 100% Chardonnay. The name “Per Aspera ad Astra” means “through hardship to the stars” in Latin – a reference both to the vines' struggle on stony soil and to the winemaker's work.
The wine has spent part of its life in oak, but not in the classic “oaky Chardonnay” sense. Fermentation takes place both in stainless steel tanks and in oak barrels (500 l demi-muids), followed by ageing also in oak (about 10–15 months) on the lees (sur lie).
In the glass: lemon, grapefruit, fresh apple, white blossoms (acacia), a light peach/white fruit nuance, wet stone, chalk and maritime salinity, the classic Chablis “oyster shell” minerality. On the palate it is dry, with bright acidity, medium body and a long mineral finish. The oak nuance is only faintly perceptible.
Domaine Charly Nicolle is located in the village of Fleys in the Chablis region. It is a family winery whose roots go back several generations. The Nicolle family has been growing grapes in the Chablis region, and today Charly Nicolle develops the domaine together with his family.
